Unfortunately we would have to install similar mods as you're using to our development version to be able to investigate further, but as one of them is a new insurance company (which affects spawning of patients), it's possible the issue is coming from there - if there's a hidden error happening when a patient spawns, it can break the whole patient generation for the day. We haven't seen any problems with patient generation in the base game recently, so it indeed looks that some of the mods or their combination are responsible.

In either case, feel free to send as a zipped-up log file from the next game session if/when it happens again, we should be able to find more info there and see if it would make sense to for example report these to one of the authors of the mods.
