How do patient collapses work?

Update: Collapses make a lot more sense now. While they're still happening, I can tell why - a delay in labs being processed, a delay in doctors getting to them to treat or assess them. I'm not having patients that have been stable for ages suddenly tank

I am still having patients who walk in and collapse as soon as they sit down, but I'm mentally putting those down as the people that really should have called an ambulance, but didn't
